It’s here and we are on it… World Soil Day is here. This commemoration stumped Bernie Sanders at a Town Hall before the Iowa primary, but now he knows that regenerative farmers feed the soil, and the soil feeds us. You may have heard about the human microbiome, a better understanding of which has revolutionized our knowledge of the forces impacting health and disease. Food grown in living soil improves our health by positively affecting gut health, reducing a tendency to obesity and other metabolic disorders, and boosting the immune system. Mt. Folly’s organic soil is alive. We know this through Haney tests, which measure respiration of the billions of living organisms in the earth below our feet. This life binds with plant exudates to free vitamins and minerals for the food we grow. In the past 60 years, with the adoption of chemical agriculture, there has been a precipitous drop in essential minerals and phytochemicals in our food. Not at Mt. Tomorrow, for the first time, our local customers can buy Mt. Folly-raised pork at The Mercantile on Main in Winchester. In addition, we have local chicken, Boone’s Settlement Cinnamon Rye Whiskey, Sweet Potato Moonshine, and various products from other regional farms.
